CARROT FRIES
adapted from Martha Stewart
Serves 2

4 large carrots
1-2 teaspoons of olive oil
sea salt
parsley
 
Wash and peel your carrots.
 
Cut carrots into thin sticks.
 
Toss with 1-2 teaspoons of olive oil and sprinkle with sea salt and parsley.
 
Spread in one layer on parchment-lined baking sheet and bake at 400 degrees for 20 to 25 minutes. Do not crowd the carrots or they will be soggy. Flip carrots half way through cooking time.
Serve warm.
